I buy jerky oxygen absorbers only after deciding whether the jerky belongs in an oxygen-reduced package. They can help protect properly processed, sufficiently dry jerky from oxidation. They cannot make moist homemade meat safe on a pantry shelf, and removing oxygen from moist meat can create conditions for botulism.
